# Wolf cooking equipment maintenance

### What maintenance means on cooking equipment

Not a checklist performed for the sake of an invoice. Four things on this equipment genuinely pay for themselves: descaling a steam oven in hard water, keeping hood filters and the damper clear, setting a door before it drops, and making sure the cooling paths are not blocked. Everything else on a service visit is inspection, and we will say which is which.

### What South Florida adds

- **Hard water,** which scales a steam oven months ahead of the manual
- **Salt air,** which seizes hood dampers and corrodes outdoor and roof-mounted blowers
- **Heat,** which keeps cooling fans working all year rather than half of it
- **Outages,** which is when a marginal board finally does not come back

### What decides the figure

How many appliances and whether a descale is included. One visit covering a kitchen is cheaper per appliance than any of them alone.

What this involves

Descaling before a boiler needs replacing

Seals and hinges set before a door drops

Fans, vents and clearances actually checked

Caps seated, ports clear, flames looked at across every burner. A yellow flame found on a service visit is a ten-minute job; found later it has sooted a season of pans.

The water side

On a steam oven, descaling with the proper agent and cleaning the tank, screens and drain path. In this water that is the single highest-value item on the list.

Doors, seals and hinges

Checked and set. A door that has begun to drop is adjusted in minutes; left alone it takes the gasket and eventually the hinge pair with it.

Hood filters and damper, cooling vents and clearances, convection fans. Most of the temperature errors on this equipment start as an airflow problem.
